VINEYARDS
Production area: family organic vineyards in Carassai and Petritoli, small hilltop villages in Aso Valley.
Soil type: mainly calcareous and clayey with varying proportions of gravel.
WINEMAKING
The harvest is determined by 3-parameter maturation curve: sugars, total acidity, pH. Thermo-conditioned vinification process for white grapes clarified by must flotation, temperature-controlled fermentation at 16°C.
Aged in concrete for at least five months.
WINEMAKER TASTING NOTES
Bright straw yellow, Malvasia gives a fruity bouquet with hints of ripe apricot and honey. An elegant and focused sip with balancing acidity leading to an energetic finish.
WINE PAIRING
Ideal with seafood, Dugnet is also recommended with vegetable lasagna, grilled vegetables and salads.
