WINE INFORMATION
Grape variety: Passerina, an indigenous grape of our region.
VINEYARDS
Production area: family vineyards in Marche.
Soil type: medium texture, with a lot of gravel.
WINEMAKING
The harvest is determined by 3-parameter maturation curve: sugars, total acidity, pH. Thermo-conditioned vinification process for white grapes clarified by must flotation, temperature-controlledfermentation at 16°C.
Passerina grapes are selected in the vineyard and subjected to a soft pressing.
The must is fermented at a controlled temperature and then sparkled in an autoclave according tothe traditional Charmat method.
WINEMAKER TASTING NOTES
Pale straw yellow wine with shades tending to greenish.
The perlage is fine and persistent.
Pleasantly fruity, with a good aromatic intensity with a memory of wisteria flowers and apples.
Pleasantly acidulous and sapid, fresh and with a persistent aromatic return, typical of the vine.
WINE PAIRING
It is ideal as an aperitif or in combination with seafood.
