WINEMAKING
The harvest is determined by 3-parameter maturation curve: sugars, total acidity, pH. Thermo-conditioned vinification process for white grapes clarified by must flotation, temperature-controlled fermentation at 16°C. It’s fermented at low temperatures in stainless steel to preserve youthful fruit.
Then, wine is moved from a vat into individual bottles while it is still fermenting, and then sealed under a crown cap.
WINEMAKER TASTING NOTES
This winemaking technique involves bottling wine partway through its primary fermentation to trap carbon dioxide gas in the bottle, creating a gentle, bubbly carbonation. No disgorgement.

Bizzarro is bursting with freshness and typically enjoyed young and chilled, so it always pays to pair it with something like a summer salad, a light grazing board with cheese and cured meats, or seafood.
